Production like setup Gateway

Hi,
We are currently working on designing a PCB for LoraWAN nodes (we will open source it) and for the gateway side, we want to build a robust Linux based system with chirp stack. I was thinking we could maybe use APU2 + Rak833 mSATA + SSD disc. Does it sound good ?

We would like to offer a GW that works for small deployments, 50 to 100 nodes sending data every 5min. Or you would recommend me to go for concentrator only in the gateway and then having all the rest of the components running in a different infrastructure?

Curious to know what kind of sensors can be interfaced with this.

The first design will be for temperature sensors for fridges, so think of rooms with fridges that store samples. But we would like to make it modular so it can serve multiple purpose.
